I moved to Portland two months ago, and I'm not a vegetarian so I'm not the best person to give advice on this. However, I would absolutely recommend Portobello on SE Division. I had their white truffle and mushroom rillette, potato gnocchi and vegetable ragout, and a slice of my friend's pizza. All of it was excellent. The only thing that didn't impress me was the coffee which was lukewarm by the time it got to me.
There is also a food truck cluster around SE Division and 50th Ave. where an Iraqi place recently opened. I had their mahshi bassal which are onions stuffed with rice flavored with herbs, tomatoes, and pomegranate. These things are fan-fucking-tastic (and vegan and gluten-free to boot). Their menu included many other vegan and vegetarian options as well.
Portablello is the place. Although there are so many Vegetarians here that most places have decent veg options. Try the Hedge house on Division and 35th. This is a brew pub with an extensive Veg menu. Portland is the land of good micro-brews after all.
Must-try: Food truck called Kitchen Dances in the food truck court at 43rd and Belmont, SE in Portland. Piper, the chef, does a vegan reuben so well that even I, who thinks that corned beef and pastrami have the power to move the universe and save souls, am impressed. He won the "Iron Vegan" competition.
Inexpensive. Check hours; might not be open Sunday, Monday.
Lots of good stuff in adjoining trucks, should you be accompanied by nonvegetarians.
